The classic Tuscan Tonno e Fagioli ( Tuna & white bean ) now is an International dish. Very tasty and simple to prepare, in Italy they serve it on top of the hot and crispy old bread as an Antipasto. You can find it anywhere, local bars use it for a aperitivo instead in restaurants you will find it as a proper dish serve as an Antipasto. I love it for a quick lunch or a tasty mezze for parties too. I added some fresh Marjoram to give it an Iranian twist, unfortunately there is no Dark opal basil in Italy but if you could find some it will be a perfect herb choice for this lovely Italian dish.

This summer wrap is beyond delicious.The crunchy cold beetroots, the lovely creamy gorgonzola and fresh salad leaves makes it a perfect summer lunch or dinner. You can prepare it for your work lunch or a picnic. Maybe kids don't like the strong taste of gorgonzola so you can replace it with Feta cheese or Iranian lighvan cheese and maybe add a some fresh lime juice to the beetroots.

This is not a classic Italian pasta but a very simple to prepare, delicious and healthy pasta which you can cook in less than 30 minutes. Turmeric & onion are best friends and we use them a lot in Iranian/Persian cooking. In general Turmeric is a perfect spice for most of the veggies such as zucchini, cauliflower and aubergine. Pasta (with eggs) give a rich and tasty flavor to a simple vegetarian pasta, if you are vegan use the common pasta and it will be delicious anyway.
